Rose apple (Chambakka) wine - Kerala style



Lets make Chambakka wine. ഇപ്പൊ ഇവിടെ ചാമ്പക്ക  സീസൺ ആണു, കുറച്ചു ചാമ്പക്ക കിട്ടി . ഒരു കിലോ കാണും .

Ingredients used.
  1. Rose apple ( chambakka - ചാമ്പക്ക  ) - 1kg
  2. Yeast - 1/2 teaspoon
  3. Sugar - 1kg
  4. Cloves - ഗ്രാമ്പ്  4 nos
  5. Cinnamon sticks - കറുക പട്ട  2 inch broken into small pieces 
  6. Water - boiled and cooled (make it to room temperature) ( തിളപ്പിച്ചാറ്റിയ വെള്ളം ) - 1 ltr

How to do

  1. If rose apple is directly plucked from tree, no need to clean, else clean using water. 
  2. Cut rose apple into 2 or 4 pieces depending on the size, Remove seeds.
  3. Put rose apple (chambakka), sugar, yeast, cloves, cinnamon sticks and water in a ceramic pot (bharani - ഭരണി ). Mix everything with a dry wooden spoon. (this is optional). Keep this for 21 days. Make sure you close the ceramic pot lid. It need not be tightly closed.
  4. After 21 days filter the wine (using അരിപ്പ ) and discard the sediments. Use glass or plastic vessels for this.
  5. Pour the filtered wine in a glass bottle. Keep this for 7 days so that small sediments will accumulate at the bottom of the bottle and wine will be clear.
  6. You can consume the wine now, if you need strong wine, keep it for another 21 days in the bottle.
Point to note:
  1. All vessels, spoon, filter, ceramic pot should with cleaned only with boiled and cooled water ( തിളപ്പിച്ചാറ്റിയ  വെള്ളം ) and it should be sun dried. വെയിലത്ത് വച്ച് ഉണക്കണം.
  2. After 21 days if you feel the wine is not sweet enough you can add more sugar and keep it in ceramic pot for few days.
