Ingredients used.
- Rose apple ( chambakka - ചാമ്പക്ക ) - 1kg
- Yeast - 1/2 teaspoon
- Sugar - 1kg
- Cloves - ഗ്രാമ്പ് 4 nos
- Cinnamon sticks - കറുക പട്ട 2 inch broken into small pieces
- Water - boiled and cooled (make it to room temperature) ( തിളപ്പിച്ചാറ്റിയ വെള്ളം ) - 1 ltr
How to do
- If rose apple is directly plucked from tree, no need to clean, else clean using water.
- Cut rose apple into 2 or 4 pieces depending on the size, Remove seeds.
- Put rose apple (chambakka), sugar, yeast, cloves, cinnamon sticks and water in a ceramic pot (bharani - ഭരണി ). Mix everything with a dry wooden spoon. (this is optional). Keep this for 21 days. Make sure you close the ceramic pot lid. It need not be tightly closed.
- After 21 days filter the wine (using അരിപ്പ ) and discard the sediments. Use glass or plastic vessels for this.
- Pour the filtered wine in a glass bottle. Keep this for 7 days so that small sediments will accumulate at the bottom of the bottle and wine will be clear.
- You can consume the wine now, if you need strong wine, keep it for another 21 days in the bottle.
- All vessels, spoon, filter, ceramic pot should with cleaned only with boiled and cooled water ( തിളപ്പിച്ചാറ്റിയ വെള്ളം ) and it should be sun dried. വെയിലത്ത് വച്ച് ഉണക്കണം.
- After 21 days if you feel the wine is not sweet enough you can add more sugar and keep it in ceramic pot for few days.
